I would have said notifications a while ago, but truthfully when my friends send multiple notifications at once the watch is so slow it's really easy to lose a few messages in the mix. I personally really love time-sensitive reminders on my watch. In my daily work, there are plenty of things to keep track of and simply telling the watch to remind me when to follow-up on those results is extremely helpful.

For me it's notifications and not having to take my phone out of my pocket all the time. Plus I get to accessorize with bands lol

Timely notification is wonderful! It's a pity that in some apps I can only use voice as text dictation (as opposed to voice recordings) for replying to incoming messages. Siri/dictation is not yet available in my mother tongue. :)

I second notifications as an answer. But also, certain complications (some of the 3rd party ones are less useful) i.e. weather, such as looking at my wrist while i'm getting dressed for work and looking at my watch to know in a glance and see what the temp is is very useful.

Also, when I'm cooking/grilling, lifting up my wrist and saying "Hey Siri, set my timer for 8 minutes" is incredibly useful when my hands are too dirty for using my phone, or it's across the room.

Isn't that still a notification though...? I mean, I understand what you are implying, but it is still just another form of notification. Notifications (be it text, email, reminder, or calendar) is THE reason I have the  Watch. I have about 40% hearing loss in one of my ears and I work in a somewhat noisy environment, so the tapping behavior for my notifications is amazing. The other primary function I use it for (aside from the time) is the timer complication right on the Modular or Utility faces.

Notifications and Apple Pay, for the places that have it, its so flipping nice to double tap and pay.

haven't used ApplePay on the watch yet. Feel goofy enough on the phone (though it's getting easier) that holding my watch down there would be weird. Maybe if nobody is there I'll try it ;)
