What do I need to do before selling AT&T iPhone 5?

Besides wiping my phone clear of it's data and settings is there anything I need to do with AT&T before I sell my iPhone 5? I am in contract and I am all paid for my bills so there should be no problems right?

Restore as new thru iTunes and you're all set.

After I wiped mine in settings it was already restored as new.

Erasing all settings and content will do the job 100%. Restoring will also do it but more time consuming.

I may be selling my wifes 4 since i got her a 5 for Christmas. Should the SIM card be removed?

Yes, always remove the sim. The SIM is personal and linked to your account. Never sell an iPhone or any other phone with the sim in it.
