Viber and whatsapp applications from iPhone

Hello,
I had made the mistake of deleting my viber and whatsapp applications from my iPhone thinking it will be the same as deactivating the accounts.

Both accounts were associated with the same phone number.

I don't own the phone number anymore, someone else bought it and has now installed whatsapp using my old number.

Will this person be able to retrieve my messaging history/photos/contacts on whatsapp? (I do not back up whatsapp)
If he installs viber will he be able to restore my information and history/photos as well?

Any information would be appreciated!
