Very odd issue after jailbreaking

I jailbroke my phone earlier today, no issues. Downloaded a couple apps from Cydia including Make It Mine. Changed AT&T to my name.

I've since done a restore and everything is fine, Cyidia is gone, but my name continues to be at the top of my phone in the place of AT&T. Very odd.

I wonder if it is because my phone synched when I plugged it in after it was JB?

Anyone know how to fix this?

If you restore to a back up, attempting to wipe a jailbreak, some things linger around. Usually text changes like this.

If you restore as a new device this should be cleared up.

In fact I think it's usually recommended to restore as a new device.

If I restore as a new device won't that cause all my backed up data not to transfer back?
