Hey there, I was wondering if it is possible to unjailbreak my iPhone without restoring it. If that's not possible, then is there a way I can restore it but not lose my texts or any other data Thank you.

No, you have to restore.
You can restore from a backup, but I DO think that brings back some of the jailbreak information. The only way to go clean is to restore as a new phone, it will all be gone then, but you won't be able to get back your texts or data like that.
