Make sure you are using the latest version of iTunes first and foremost, If so then try placing your phone in DFU mode and install that way. Hold the home/Power button, when black screen let go of power and hold home button until the screen tells you you are now in that mode.

Can you not go to Settings - General - Software Update, and then select the awaiting iOS 8.4.1 update to install OTA, as long as you're connected to Wi-Fi?
