If there is no disclaimer that you shouldn't swim with stainless steel Watch series 2, than I don't see any reason not to.

I think the thing to remember, is to use the 'extract water' feature once you're out of the pool.
An example is shown, here.

There will be no issue in swimming with the stainless steel model, it won't rust.

I'd just make sure that if you swim in salt water, rinse it with fresh water afterwards.
