Apple says the 6S can get up to 866mbps download on wifi. I just had Google Fiber installed today and the fastest speed I've seen was 500mbps download. While I'm not complaining, I was excited to see 800+, how am I supposed to see those speeds?

Try changing the channels on your Wi-Fi router or use the 5 GHz frequency to see if the speeds improve.

After more research I have come across my answer. First unrelated to the answer, you can separate your 2.4GHz and 5GHz bands on Google Fiber, but the out of the box feature is to have them merged. The answer I was looking for is simple, Google provides an N router with Google Fiber rather than an AC router. The N router only supports up to 300-400mbps download, whereas the AC router will support 1,000+mbps download. So in other words, I need to buy a new router.

I wouldn't know on that. I use Comcast wifi and rent their modem. Down speeds vary from 65 to 88 Mbps. I would try another modem/router.
