Should I say 'ok' to the "carrier update" message that keep popping up on my iPad? The carrier listed in 'settings' is different from the one I currently use for my phone service.

Mine was Verizon. Just said settings update. No clue what. And if you call support, they don't have a clue. But it's always good to do the update. It does something to make things work better. I think.
