Selectively restore data from backup - possible?

When I get my iPhone 5 I don't want to restore my backup in its entirety, because it's a backup of a jailbroken 5.1.1 and I don't want my jailbreak app data/configuration/settings to be restored (I know the app itself will not be restored, but I've heard that the data/configuration/settings information may be included). In other words, I want to start my iPhone 5 clean.

But there are some stuff I wish to transfer over, like certain app data (WhatsApp), text messages, certain games savefiles, etc.

Is it possible to choose what gets sync-ed and what gets dropped?

Not possible with a stock phone as far as I know.
