Remove I cloud and Facebook

Yesterday I had to go to the Apple store as I could not load Whats App as the restrictions passcode was unknown. They wiped the phone and reloaded 9.3.1 via my Facebook account. I would like the phone without I cloud and without facebook. When I try to remove these it wipes out my contacts list and still tries to attach them to facebook lists. I rarely use facebook so this list is not up to date and different from my normal contacts.
How do I achieve this and is it possible?
