The same was said about Amazon's pricing of the Kindle Fire and yet, they arguably undersold the competition and made a huge splash. What is preventing Apple from doing the same?

Remember those also are 32 gig
So a 8 gig mini could easily be 249 16 349 32 449 64 549

The iPod 4g 8gig is 199 also

So I am going with 249 to 299 max
