Now that I have a 4S iPhone with the new 6.0 iOS. What's better to have? Is it better to have the 4S with the new 6.0 OS?
or
The 4SPhone that I can Jailbreak with the 5.1.1?

If it's better to have the Jailbroken option, is it easy to go back to 5.1.1? If so, can someone direct me to the link.

Thank you.

Well, you can't downgrade to 5.1.1 anymore so you're stuck with 6.0 I'm afraid.

If you like your iPhone 4s with iOS 6 the way it is why change it? On the other hand if you can't find an app for something you want/need jailbreaking may be an option.

os6 made my phone slower and lost battery life so 5.1.1

Maybe for you...my work phone is a 4S and it didn't make a difference at all in either performance or battery life.

Also, there's no way for us to tell you which scenario is better for you OP...if you need it jailbroken, obviously iOS 6 is not going to be optimal for you right now, if you don't care, iOS 6 is the way to go (to gain the features at the very least).

Since you have upgraded to 6.0 and you have time with it before a jailbreak is available, Why don't you try and see how 6.0 works for you stock becvause you might like it the way it is. Unless you have a particular reason to JB you might just find that the stock 6.0 will suit your needs.
