I am contemplating upgrading all of my 3 lines to iphoneS and jbing them...then I want to resell two and keep one but I dont need the data plan...is it possible to use a jail broken iphone on att network so they dont know?

Right now there is no jailbreak for the 3GS. You can only jailbreak the 2G and 3G and iPod Touches.

And to answer your second question, no you cannot hide the fact that you're using an iPhone from AT&T. I'd honestly say that you wouldn't want an iPhone without a data plan anyway. It's kind of like owning a pool and deciding you don't need water. Everything that's cool about the iPhone is wrapped around the internet, at least IMHO.
