Jailbreak question

I think i understand how to jailbreak my 3g, but i'm wondering do I have to do a restore with 3.0 as the first step as it has already been restored updated and restored with 3.0

Not interested in unlocking, just jailbreak.

Also, do you have to remove the sim card when jailbreaking?

And no, you don't have to remove the sim.
