I would like to stop family members from family sharing from being able to erase my devices, place them in lost mode or activating the 'Play Sound' feature in Find My iPhone.

Welcome to iMore! You can always turn "Find My iPhone" off in Settings > iCloud. But then if you lose your phone, you can't use that to find it. That said, they can't do all those things anyway, unless you're sharing the same Apple ID. You should have your own Apple ID. Even with Family Sharing.
