I personally keep my HDR always on. By keeping it on always you have an advantage of having both the HDR photo as well as the original photo(without the HDR). This way you can choose which photo you like better and keep that!

I like to use 3rd party apps which allow me more control over my camera. I use ProCamera, Camera+ and Pro HDR X.
