Really feels like what iOS 7 should have been from release. Makes you wonder if they may have pushed it out too soon.

You can jailbreak on 7.0.4 I think if you updated OTA it just varies from phone to phone if there might be problems. Worst case scenario, you'd have to restore to 7.1 if something went wrong.
