Apple could do something like BBM with iChat, if they really wanted to. Also, with the front-facing camera, you could have near seamless integration with iChat AV on the dekstop.
As far as the one thing that needs to change: notifications. I've owned Android and WebOS devices. The OS itself is not as fluid, but the notification systems were much more elegant.
As far as widgets, they are neat, but they chew through battery. I don't want to sacrifice my ability to stay off a charger for over 48 hours with the iPhone (if necessary) just to have widgets back.
Just my two cents. Apple isn't going to change much in iOS because they obviously have a product that people, for the most part, love. Part of the allure of the iPhone is that someone can just pick one up and start using it. If you start adding too much to that, you lose that selling point.
