I use the baby Pro and an Apple Pencil to take notes in meetings. The app I prefer is Goodnotes. I used to use a keyboard but I found that often others would be distracted by the sound and/or think that I was following up on emails during the meeting and not paying attention. With the pencil, no one minds and it's no different than a sheet of paper.
This is exactly why I bought the Apple Pencil. I also have a surface pro 4 and I LOVE the surface pen.
I think having the ability to hand write your notes digitally during a meeting is much less distracting then clacking away at the keys on a keyboard. I used to use my surface pro 4 all of the time because of its handwriting to text recognition software is top notch, but after buying an iPad Pro the SP4 seems so much heavier to lug around. I really wished that Apple would include handwriting to text recognition in iOS. Samsung is able to do it with the note series, which also works amazingly well. So it can be added to a mobile platform. If Apple were to do that then I'd most likely never use any other device ever again.

Interesting for sure. One thing that can help with this is that at least Goodnotes allows you to search your handwritten notes without converting to text.

Pen and paper unfortunately. Due to the sensitivity around our data we can't use personal devices for anything and the force have more important things to worry about than buying iPad just for us to take electronic notes :(
