I set up an Apple Watch with my Apple ID but paired it to someone else iPhone

Will the watch still be able to access my mail accounts and messaging and photos if it is paired with someone else iPhone but with my Apple ID?

I don't think so, but I can't say for certain because I don't pair my watch with someone else's iPhone. You do realize that the person whose iPhone your Watch is paired to has complete control over it, right?
