How to delete iOS 8.0.1 update download from your device to avoid accidental installation?

Once it's downloaded you can remove it.. Just don't go into that setting section.

Go into settings - general - usage and under "Storage" go to manage storage and you'll see 8.0.1 there. Just delete it.

It wouldn't accidentally install anyway since Apple servers won't sign it even if you tried to manually install it.

Not quite. Once they've installed it, they can't go back. However if they have downloaded it but not yet installed it they can remove the download.

For the original poster, why not just install the latest version of iOS (8.1), and just skip 8.0.1 all together?

and you can turn off automatic updating to prevent OS updates from downloading automatically

Set auto update to manual setting that way you can chose it if you change your mind.
