My son's email address has changed --- i want to add his new address to messages and delete the old one...how?

If you're speaking of the email address to send/receive messages in iMessage, you would have to create an Apple ID with the new address. Once you do that, you'll have the option of selecting the new email address.

If you are talking about changing his email address in your contacts just click on his name and click edit up in the right top and change his email address.
