How do you stop the automatic back-up to iCloud?

iPhones automatically back up data to iCloud every 24 hours, or at anytime if done manually. I have sensitive health information that I dictate into my iPhone and I am concerned that this may be getting backed-up automatically to iCloud. How do I turn that off to ensure healthcare privacy and security regulations are followed?

Any HIPPA complaint app should store data in an encrypted manner such that backing up that data is not a risk. If any app or process you're using is NOT HIPPA compliant, you should stop using/doing it.
