I have 2 Apple watches. The original that I wear to work and for dressy occasions and a series 2 that I use for fitness activities. If I wear both in the same day, at different times obviously..lol..my activity rings on my iPhones Activity app (move, stand, and exercise) only uses one of the watches results. Shouldn't the app get the results from both watches and add them together??

I don't have two Watches connected right now so I forget exactly how it works but I think you can open the Watch app on your iPhone and toggle between the active Watch, so it knows which one you're wearing and which to sync Activity data for.

Otherwise it wouldn't know what to do, for example, if you had passcode off on one and were walking around with it in your hand or bag. It would read like double activity.
