How do I disable data on my iPhone 5?

I am on airplane mode and would like to use hotel free wifi but want to make sure by roaming data is off!

Go to the Control Center. Turn Airplane mode ON. Turn WiFi ON.

The top status bar should show Airplane Mode, WiFi, but NO cellular icon.

I agree, you need to turn on WiFi 1st, but leave Airplane mode on until WiFi is connected. Then turn Off Airplane mode - this will ensure no cell data is used in the transition to WiFi.
Then turn off the Data Roaming when in the cellular data settings, and also WiFi Assist (for iOS9).
