Welcome to iMore. Just go into Contacts and edit it from there. Once you tap on the contact, it will open, then just tap edit in the top right corner. Then edit it.

Go to Settings >Mail, Contacts and Calendar > scroll down to Contacts > my info > Tap on your name.
