I installed SwiftKey, and it's great--but often the built-in keyboard will show up instead. I can get back to SwiftKey by clicking on the globe and then the letters, but why do I have to keep doing that?

Change the order of the keyboards, that will help. Go to General>Keyboard>Keyboards>Edit and drag to the top swiftkey with the 3 lines on the rights.
