Help re ITunes sync

I am no expert on ITunes, but have my own IPhone sync'ed with all I require.
However, I have a friend who makes me look like an ITunes expert. I have proimised to help him set up his already functioning IPhone with his laptop.
The problem is that he has some 21,000 songs on his ITunes (totaling some 61GB !!!.)
As I have normally just synchonised all my music I am a bit uncertain as to how to progress with the friend's songs.
In my own ITunes ALL the songs are showing as "ticked".
Can I I untick all his songs in bulk and then manually tick a proportion which can fit his IPhone (or is there a better way??)

The better way, to me, would be to have him\her create various play list in iTunes. Then sync those...

Creating and adding items to a play list is a manual process (I can't stand it), but I think it would work better for all intent and purposes.
