Getting new iPhone 6S; what do I do to get Apple Watch running?

I will be replacing my iPhone 6 with a 6s on release day.

I use encrypted backup, so switching to the new phone is easy.

I am unsure, however, how to get up and running with my existing Apple Watch on the new phone. Do I have to start from scratch and have the iPhone restore the watch after I have restored the phone? Or does it just re-pair and pick up where it left off?

If you restore your new phone from a backup just pair the Watch with the new Phone and everything will be the same. I believe if you set up the phone as new and not from a back up you just pair the watch and redo your settings and reinstall apps.

Here's what you do..

When you get the new phone, first - unpair the watch and the old phone... this forces a backup of the watch to the phone...
Next... backup your 'old' phone to iTunes, using the encrypted backup - that will backup the watch's health data from the phone...

Next... swap SIMs from the old phone to the new one... sync to iTunes... then restore the backup of the old phone to the new one... this should get your new phone to where it was on the old phone before switching...

Next... pair the watch to the new phone... this will restore the backup from the phone to the watch and you should be right where you left off on the watch...
