You can delete it by going to Mail in Settings, then to Accounts. Select your gmail account and delete it. That will delete the account from the device only.

Take a screenshot of the file system showing the gmail app installed and post it here so we can know exactly what you’re referring to.

Did you sync or reboot the iPhone to delete what may be cached files?

But if you’ve deleted them then they are not going to be present for you to find. If you’ve deleted gmail from your iOS device, sync the iPhone to your computer and then see if the files depicted in the screenshot are still visible.
