The soft and inoffensive term is called metadata. A picture or still frame from a video gets elements or the whole image determined by central server farms AI. It is part of the data collection process by big tech data collectors. In other words their programs figure out what you’re looking at, taking pictures of or what is happening in front of your house.
I don’t know if Eufy is doing that but be certain if they’re connected to Google Or Facebook or an number of others, they are very much in the business to generate “metadata” from your video/pics.
