I live in the US. I have an iPhone XS on ATT. Bought it directly from Apple when it came out and paid full price.

I have family that live in a small town and Verizon is the only coverage in the area. Would an esim from Verizon work ok? Does wifi calling work well? I enabled it and calls would be to numbers in other states but not international. I assume this is fine from what I could tell and wouldn't get charged more.

Side note- has anyone used gigsky when traveling to Canada or Europe? Am thinking this would be a good choice for Data if/when I need to travel.

Everything you described should work. I live in the US and last month I used a GigSky eSIM in the UK on my unlocked T-Mobile iPhone XS and it worked great.
