Everytime you sync the phone does the backup first. So, let me get this straight, if you have synced you have a backup. Now when you try to do the upgrade it stalls out during the backup phase? Is this correct? If so I would try to re-download the update first. Then if it were the same issue I would try and do a restore from backup and then try the update and lastly I would try to restore as new then try the upgrade. The last option wipes your phone clean and you'll have to re sync all of your media,contacts, and whatnot.
