Can you play Mario kart 8 deluxe on two switches using a multiplayer room?

I believe if each Switch has its own copy of Mario Kart, they can play together. I've seen in trailers up to 8 people playing local multiplayer, though I've never even seen that many Switches in the same place in real life before.
