your camera roll is on the actual phone itself the photostream is online in the cloud.

if you have multiple devices then you should use photo stream. i take photos on my iPhone, then it automatically downloads onto my iPad [via photo stream] for me to do editing. [i don't like editing on the iphone, its too small] then it travels to my MacBook [via photo stream as well] so i can save/upload it.
