Since I've been wearing my Apple Watch Series II, SS SB, the Calendar app will sometimes open on its own.

At first I thought maybe I was pressing the crown, when my wrist would bend back. But now I think something else is causing this.

Anyone else notice something similar?

Not been near water, yet. And I never manually opened the calendar initially. If any app would have been in 'recent', should have been iMessage or Mail.

For today, I'll use a watch face without the date. Let's see how this works out.

I don't have the series 2 model, but on watchOS 3, double clicking the crown will bring up the last application. This may not be the case since you haven't launched it manually, but maybe try launching another app and see if the calendar still launches randomly.

Do you have the Calendar complication on the watch face? If so, tapping it will take you to the app. It's something that could happen by accident.

I've had the same thing happen a few times, and for the life of me, I can't figure out why. It might be relate to Reminders. I took the Calendar app off the Watch (via the Watch Apple) and it hasn't happened lately.

I've got the World Clock complication at the bottom of the activity app, and I've managed to hit it more than a few times.

New watch face and watch band, too. Thus far no Calendar issue...
