I'm thinking about installing Windows 8 (and later on Windows 10) on my MacBook Pro and I wanted to know if the applications that I have installed on my Mac would also work on the Windows portion of the computer.

For example, I have Microsoft Office installed on my Mac. Would I have to reinstall this on the Windows Portion, or would the applications work on both?

Apps between platforms/OS are not interchangeable. You'd need to install Windows versions of the apps on the Windows partition...
