Block spam emails without opening them

I've tried everything on how to block a spam email. Without actually opening the email. Can I or is there a way to just block the name they use in the heading? Most spammers have fake email addresses and also once you open it. Now your open to more spam

I use the stock mail app for iPhone. The only account I get spam (the scam kind) is on just one gmail account. I don't tap on them. I tap "edit", then mark it and send to trash. Then I go to trash and delete all that's there. Are you referring to email on iPhone or computer? I don't see the need to open one. I recognize them. What mail app forces you to open spam?
