2.2.1 upgrade to 3.1.3

I have a 3G-16G Iphone I am using as an Itouch. I currently is operating on 2.2.1 an is requesting an upgrade when I sign-in to Itunes. I plan to unlock and jailbrake this phone. Should I avoid the upgrade?
If I keep the 2.2.1 installed what program should I use to unlock and jailbreak my phone. Is it difficult?

BUT This is ONLY jailbreak for the 3G, NOT unlock!
