Great list! I'd like to add two things:

1. A SD Card:

You're going to want the extra memory.

2. The Pro Controller:

The Joycons are great and I love them...but...

They're a little small, you'll want a bigger controller for longer gaming sessions

If I get a switch, I will probably do this just because the joycons are so expensive. I have two PS4 controllers on which the thumbstick rubber wore off

There is probably quite the debate on that! (There always is one...)

I'm a bit of a worrywart when it comes to applying skins, RESIDUE!!! , but that dock skin is worth $20 on it's own! WOW!!!

One thing I would mention is that the switch has a plastic screen, so I would TOTALLY spring for tempered glass screen protector just for the feel alone. I can't stand plasic screens... Anker sells a two pack of tempered glass screen protectors on Amazon, and right now it is on sale for $5! As far as carrying cases, I adore the cases from Waterfield. They aren't cheap, but they are premium leather and look AMAZING. It has a plush pocket for the switch with a microfiber panel to protect and clean the screen, extended side panels to protect the joysticks, five slots for game cartide storage, a pocket for charging cables and earbuds, and a place for JoyCon wrist Straps. One other thing I really like about Waterfield is the amount of flexiblility the system has with different straps and stuff. The whole thing is AWESOME.
