I think you're better off going to a carrier store than Best Buy. I purchased a Note 7 and I didn't get on launch day, they didn't have my phone until the Tuesday after. You can still pre-order in store, but it won't guarantee you one on launch day.
The audio jack takes up a significant amount of space in the internals of the phone. Space that Apple probably put to better use. There are pros/cons to the move, but it's necessary to push the industry forward.

My understanding is that all recent iPads are unlocked. The sim can be locked, so you would just need to remove it, and replace it with a SIM card from the carrier of your choice.
Can you select the manually manage the information when you connect to your work computer? You need to be using the same itunes id, then you have to authorize the computer. I think that should do it.
Worst case report a problem and redownload the song at home or your iPhone.
