My mother suffers from early dementia. I just bought her a new MacBook Air.

Can I disable any kind of password protection in macOS?

I don't think so. But, unless you have FileVault turned on, you can use the "Users & Groups" Systems Preferences page to automatically log in to an account when the computer is started.

    See https://support.apple.com/en-us/HT201476

(See also the note about using the iCloud password as the computer account password on that page.)

I have a Mac Mini set to automatically log in to a specific account, so I know that this works.
