So with my taxes I am purchasing a used 2010 MacBook Pro, and I was looking into upgrading the RAM, and will definitely be able to do that, but I was also wondering about the possibility of putting an SSD in the MBP as well, and was wondering where I should start.

Definitely possible to do easily yourself. I suggest going to OWC (macsales.com). Not only do they sell all sorts of Mac upgrades but they have good instructions and tutorials.

Now will I be required to keep my HDD? Or is there a way to just have the SSD?

You can have just the SSD. You ca also get kits to replace the DVD drive with a secondary hard drive. Make sure you have the OSX installation on USB first.
