Curious, my phone could go to the dim screen (before total black) and then randomly light back up. Vibrates randomly (email not set to push and not receiving texts or fb messages). 4 times now conversations we've had in our house have been referenced. Could be a co-incidence, but is it possible phone could be hacked? Phone hasn't left my side.

Maybe, but I can't say for certain. If you feel the device has been compromised, put it in recovery or DFU mode and then restore it afterwards, set it up as new and NOT from a backup.

Welcome to iMore! Exactly what @Just_Me_D said. It's unlikely that your iPhone has been hacked due to Apple's closed architecture but it doesn't mean it's impossible, especially if someone physically had access to your phone. Either way, restore your device and set up as new. It's just not worth worrying about.
