I'm seriously thinking about jailbreaking, however I also want to wait about a week for the iOS7 update (hopefully) to see what it brings to the table. Question; "if the update comes and I go ahead with the update, do I have any time to go back to the older iOS7 so I can jailbreak?" Other platforms gives you about a week to decide and since I'm fairly new to the iPhone and Apple I was just curious whether or not it's the same.

Depends on how long apple leaves the signing window for iOS 7.0.4 open after 7.1 is released. Usually it's anywhere between 6-72 hours.

Unless you have the SHSH blobs for iOS 7.0.4 you can't. You can't use blobs from another device so it will only work with yours.

5S only uses APTickets, plus with no bootrom exploit at the moment you won't be able to downgrade anyways.
