I am really confused about how to change the picture in the middle widget.

I realize in have to replace this one, I just don't know how to do so. Do I need a file manager?

You can use iFile. The image is in the widget folder, and it's just named image.jpg. Replace that with an appropriately proportioned pic of your liking.

Mine's nothing special either (yet), but I finally caved and upgraded my iPad 4 to iOS 7, then immediately jailbroke it again:
