if i buy a gevey sim will it stay permanently unlocked even if i upgrade to ios 7

As far as I know, Gevey sims are OS specific... so until Gevey says so... their current offerings will likely not unlock on iOS7.

What's the point of these now? I used these a few years ago when unlocked iPhones were not available. I was under the impression these were more or less obsolete.

It depends on the carrier. Sprint, SoftBank and Rodgers are notorious for making unlocks expensive, if not impossible. Customers of those carriers (and others) still need unofficial unlocks. But yes until the gevey sim is confirmed to work on iOS 7, stay away.
