I've been changing most application icons without Winterboard as long as the app is in /Applications
But the apps in /var/mobile/Applications are a problem. Each app is in an enclosing folder with a cryptic name. Any change inside these folders breaks the app (even though my icon change shows up).
At first I thought it was a PNG format problem, but from what I've gathered, it's because these apps are digitally signed.
Is there anyway to change these icons? Specifically: AIM, MLB at Bat, Facebook.
