What Happens After Next Apple Update

I am curious about jailbreaking a 3G iPhone and would like to know what happens after Apple issues their next software update.

Do I have to make sure not to sync until there is a new QuickPwn update? Can I turn off Apple software updates and continue to use iTunes?

You can sync fine. Just don't update the firmware, well you could update but you would lose your jailbreak.

If you lose it and jailbreak again, will you still have all of your jailbroken apps when you get the new quickpwn or will you have to redownload everything?

Those will sync once you connect to itunes, right?
